I would like to see Roy Marsden as Ratchett... don´t know why, I just picture him in that part :D Derek Jacobi would be perfect as mr Masterman (or Beddoes as he is called in the first movie).
Helen Mirren would be perfect as mrs Hubbard.
But who on earth will play the russian princess? Wendy Hiller was just perfect, that part will be hard to do better in my opinion.
